Friday's Makes, Bakes & Learns #4

I found this Cranberry & Pomegranate Sauce recipe at BBC Good Food.  I made it for the first time last Christmas and its super easy and tasty - nice with cold meats and cheese as well as turkey.

Here's what you need:

250g fresh or frozen cranberries (I had some in the freezer from last Xmas!)
85g Demerara Sugar
100ml Pomegranate Juice

Put all ingredients in a pan and stir well to combine.

Bring to the boil, then reduce the heat and simmer until the cranberries start popping (5 mins for fresh, 8-10 mins for frozen) and turn into a runny sauce.

Leave to cool before serving.  Can be made up to 2 days ahead or frozen for up to 3 months.
